Try and see the series Spaced. Originally aired by Channel 4, the only DVD release is Region 2 so far. There are only two seasons, with a possible third, seven episodes a season, but each episode is loaded with cult references, mainly from the world of Sci Fi and related TV, Movies and literature, but from more obscure sources as well.
The basic premise is two people lie about being a couple to secure a flat, this sounds pretty uninteresting in itself, but the show has to be seen to be believed.
References over the two seasons that I can remember include, but aren't confined to.
Robocop, Terminator, X-Files, Babylon 5, Star Wars, Star Trek, Buffy, Platoon, Apocalypse Now, The Matrix, One Flew over the Cuckoo's Nest, 2001, Close Encounters of the Third Kind, Back to the Future, The King and I, Casablanca, Resident Evil, Evil Dead, THe Exorcist, Thunderbirds, Aliens to name but a few.

I remember a scene where they had a shootout in an alley using imaginary weapons and i remember seeing the end of an episode that mirrored the end of The Empire Strikes Back, except they were watching through the window of their flat at a van outside that had 2 other people in.

The guy who was the voice of Darth Maul was in it also.. That episode.
Made mockery of his lines in Phantom Menace, and one nice Jurassic Park spoof.
